I love oats, oatmeal, granola, flapjacks you name it i just love them. These are the only way i get my fussy 2 year old eater to eat oats anymore, he has recently stopped eating his oatmeal in the morning, the only thing he will eat loads of is toast! he loves it, luckily he will have wholemeal bread and a banana. I feel like I’m throwing so much food away because you never know what he isn’t going to eat next but for now he is still eating and asking for these so I’m trying to make them as healthy as possible. Another thing thats good is they don’t take to long to make, I’ve had some disasters recently trying to make cookies and muffins and bread whilst trying to juggle a baby that needs feeding and a toddler that loves to climb!
Today i used unsalted butter but next time I’m changing it to coconut oil as I’ve been replacing all my butter in my recipes for this and it tastes so good, you can hardly tell in some things that its not butter thats in there. I will update once I’ve tried it.
I’ve also recently been using raw honey for sweetness instead of sugar, it smells and tastes so good. I melted the butter and honey in the pan and took it off the heat and added the oats, i add the cranberries and chocolate chips after letting it cool for a bit because if its to hot the chocolate will just melt into it whilst I’m stirring it in and i don’t want that so after it cooled slightly i add in the chocolate and cranberries then put into a prepared baking tray, into the preheated oven for about 20 minutes or until golden brown. you can add in whatever dried fruit you like if you are adding more just minus the weight off the amount of oats you are putting in. i let it cool for a bit then slice it up into squares or sometimes small bars and my patiently waiting toddler (little t) brings me his plate ready to put one on 🙂
*UPDATE we now use coconut oil instead of butter and it tastes so good, also we chop up a handful of walnuts and add some Organic shedded coconut too, you can pretty much add any extras you like, we have fun trying different ones.
6oz coconut oil
6oz raw honey
1-2oz semi sweet or dark chocolate chips (optional)
1-2oz dried cranberries (optional)
Up to 2oz of extras nuts, raisens, dried fruit etx
1. Preheat oven to 180 degrees C and grease a baking tray with coconut oil
2. Melt coconut oil and honey in a pan
3. Add oats and let it cool
4. Stir in chocolate, cranberries and any ither extras put in the oven for approx. 20 mins or until golden brown
5. Leave to cool then slice up and enjoy.
