Our little boy loves pancakes, it all started when I was pregnant with his sister and pancakes were one of the things I could eat and of course he helped me, since then we have experimented with a few recipes and settled with this as our go to for our Saturday morning treat. We sometimes like to substitute the unbleached all purpose flour for white spelt flour, and for our baby girl we mash in a little banana, our boy likes it with blueberries and its chocolate chips for dad who also discovered maple syrup is so good with lemon juice, sometimes I need to add a little more milk at the end when everything is mixed in so its not too thick. We can’t use almond milk just yet as baby is only 9 months but I’m sure they taste just as good. I can never get them completely round although that makes no difference to the taste, as an extra bonus this mix always leaves enough for the next day 🙂


4TBS coconut oil

2 eggs

2 cups milk/almond milk

1 3/4 cups unbleached all purpose flour

1 cup oats

4tsp baking powder

1 1/2 TBS flax seed


Whisk coconut oil in bowl then whisk in eggs one at a time then the milk

Shift the flour and baking powder and mix into liquid mix

Stir in oats and flax seed

Add a little more milk if it’s too thick

Heat some coconut oil or butter in a pan

Use a 1/4 cup to pour batter into the pan

wait till it bubbles on one side and then flip over

Serve with fruit, maple syrup, lemon juice
