Chocolate Chip Cookies

My little boy loves cookies so when we make them I like to make them as healthy as a cookie can be, but my hubby has a major sweet tooth so these are really for him, trying to make a healthier version of cookies and cakes that taste good is a challenge. I substitute the butter for coconut oil and must say it tastes so much better than the butter version, it’s soft and moist just how we like cookies to be. I know a lot of people have different views on subbing sugar usually I would use raw honey instead but I haven’t tried that yet with this recipe, one day when I’m brave enough I’ll let you know. 🙂 we always use dark chocolate for cooking and mostly eating too, I’m very fussy with chocolate and the types I like are expensive so it’s definitely a treat when I have some, Lindt and green and blacks are my favourite, my little boy loves green and blacks too we have always tried to avoid giving him sweets so if he’s going to have a treat it might as well be the good stuff 🙂

Chocolate Chip Cookies

3/4 cup light brown sugar/organic sugar/coconut sugar

1/2 cup coconut oil

1 egg plus 1 egg yoke

2tsp vanilla extract

1tsp Apple Cider Vinegar

1 1/2 cups unbleached all purpose flour

1/4tsp baking soda

1 1/2 cup dark chocolate chips plus a few extra


Whisk the coconut oil then add sugar and mix well

Stir in egg, egg yoke, vinegar and vanilla

Siff flour and baking soda and fold into wet mix

Stir in chocolate chips

Line 2 baking trays with grease proof paper

Divide mixture into approx 22 balls and place in the fridge for 2-3 hours

Preheat oven to 165 degrees c

Bake cookies for approx 10-15 mins depending on your oven they should be golden brown around the edges

Push a few of the chocolate chips into the top of the cookies while they are still hot, then place cookies on a wore cooling rack until cool.
