Autumn Soup

I love autumn, the chill in the air and the red leaves in the trees, Halloween, Guy Fawkes, Thanksgiving and soup! I love soup but only the homemade kind, once I started making homemade soup I’ve never gone back, I double up and freeze the leftovers. With fresh homemade rolls it’s just amazing! 

I use organic when I can but I’ve never seen organic onions, or sweet corn, I use organic low salt stock, I’ve made chicken stock once from chicken bones but we rarely buy a whole chicken so right now I’ll onl be making my own on the occasions we do, and the veg stock ,well I just think it’s a waste of veg. 

Autumn Soup
1 large sweet potato

2 medium carrots

1 red onion

1 red pepper

2tbsp flour

1 litre veg stock

1tsp chilli powder

1/2 tsp cumin

2 cups sweetcorn

Directions 

Melt a good size spoonful of coconut oil in a pan

Chop sweet potato, carrots and onion and fry in oil for about 5 mins

Mix flour, chilli powder and cumin together and stir into pan and cook for 1 minute then add stock

Add the sweet corn and pepper and simmer for approx 20 min or until carrot is soft. 

Blend in a blender and serve with warm homemade rolls.
