One thing on my to make list was chicken nuggets because the kids love them, we usually buy a big bag from Costco because they are the best ones with the least ingredients, but even so it’s still processed food and in our journey to cut most of it out this is one more step. I find it interesting that most of the aisles in the supermarket we don’t bother going down, and apart from the fresh food section there’s only a select things we buy from the aisles we do go down. I saw a something on Facebook the other day which said something like supermarkets have a health food section, so what does that say about the rest of the food in the store!
UPDATE.. We no longer buy the costco nuggets these are so much nicer and now use gluten free bread and a mix called Queen of Nile by My Secret Kitchen in place of the salt, pepper and cheese about a tsp per slice of bread. We also use this coating on cod and the kids love it!
You will need…
2 chicken breasts
7 TBS (appox) Olive/Advacodo oil or your choice of oil
Himalayan pink salt
3 slices of bread for Breadcrumbs
6 TBS Parmesan cheese
Preheat oven to 425 degrees f/ 220 degrees c
Grease a stoneware or glass baking dish
Cut the chicken breast up into bite size pieces
Put 4 TBS of oil in one bowl you may need to add a little more
Blend bread into breadcrumbs (I do one slice at a time so I divide the cheese and oil by 3) and place it in another bowl with some salt and pepper to taste, 3 Tbs of oil (if your doing it all at once) and the Parmesan, mix it all in so its all combined, the oil should coat all the breadcrumbs.
Coat the chicken pieces in the oil then press them into the bread crumbs mix till covered then place onto prepared tray
Bake in oven for approx 20 mins then turn over and bake for a further 10 mins, they should be crispy and chicken cooked through, I always take one out and cut it in half to check.
Enjoy with some salad and homemade potato wedges. 😀
