Leek & Potato Soup with Soda Bread

20160209_142749.jpgWe love soup in our house and this soup is super simple to make with the soda bread.  Little s doesnt like normal bread unless its toasted but she will eat soda bread. We buy our baking soda in bulk from amazon as we know its natural ingredients and has no aluminum in it and make up our own buttermilk with milk and lemon juice. For the stock we either use our homemade Chicken stock or kallo low salt.

For the soup you will need…

Ingredients

3 leeks washed and sliced
1 medium red onion
1 stick celery
200g peeled and chopped red potatoes
1 clove garlic
Black pepper
750ml chicken/vegatable stock
1/4 cup cream/milk or milk alternative (optional)

Directions

Saute leeks, onions and celery in some coconut oil until soft.
Add garlic, black pepper and red potatoes and stir.
Next add the stock and simmer until the potatoes are soft.
Leave to cool then blend.
Put soup back into the pan, add milk or cream and heat through.
Serve with some freshly made soda bread!20160209_140247.jpg

For the soda bread..

Ingredients

1 tsp baking soda
2 cups organic plain flour
1cup/250ml milk or milk alternative
1 TBS lemon juice

Directions

Preheat oven to 180 degrees c and grease a bread tin.
Add lemon juice to the milk and set aside for approx 10 minutes.
In a mixing bowl combine flour and baking soda then add the now buttermilk and stir thoughly until all combined.
Place in the bread tin and bake for 30-35 mins.

A good friend of mine gave me a leek and potato soul reciepe a while back and I made it and was a huge hit in this house but then I lost it and ever since have been trying to find a new reciepe to try.. so thanks 🙂 Looks delicious xx
