Gluten Free Pancakes

We have been experimenting with gluten free recently just so we can reduce our gluten intake,  when we looked at are diet and the things we were eating it seemed we were eating way to much gluten and so the experiments began.  

I tried coconut flour pancakes first but they were a flop, they were edible but just not fluffy and we love fluffy! So I took my regular pancake mix recipe and started from there by replacing the flour with a gluten free flour,  then replaced the milk with oatmilk, for some reason sometimes i have to add a bit more flour to get the right consistency and sometimes its fine so bare this in mind when trying these. 

For the little ones they eat theirs with maple syrup, for me i spread some raw honey sprinkle cinnamon and some fresh lemon juice and serve with fruit. 

*UPDATE we now use banana instead of egg and add some cacao powder to make chocolate pancakes 🙂

This mix makes approx 8 pancakes 

You will need.. 

2 TBS Coconut Oil

1 egg/banana

2 tsp Apple Cider Vinegar 

1/2 tsp baking soda 

1/2 cup organic oats

1 cups gluten free flour plus 1/4 cup

1 cup oat milk

Whisk up the coconut oil in a bowl and whisk in egg

Add the rest of ingredients and if its too runny add some more flour till its a thick batter. 

Heat a small amount of oil and use a quarter cup of batter per pancake

  1. I’ve never attempted to make gluten free anything! Kudos to you for having a level of discipline that I don’t. lol
