Cabbage Roll Casserole 

We love making food from other countries, mexican is up at the top but Romanian comes close, our favorite dessert is Romanian Apple Cake its just to die for, i will post the recipe soon as we will be trying to make it gluten free but its easy just to switch the flour 1:1. Anyway the cabbage…  We love this recipe its so yummy, with having two little ones my hands are full most of the day and i often find i dont have a lot of time to fix meals and cabbage rolls take a while except when you do it this way! 

I used beef but minced pork is traditionally used and we don’t eat rice so i substituted it for quinoa. We buy our meat from the local farm and buy our fruit and vegetables organic when available we have found the quality at sainsburys here in the UK to be the best and keep the longest. 

Ingredients 

500g Minced Beef

1 large organic  red onion

2 large organic carrots grated

1/2 tsp paprika 

1TBS organic garlic (fresh or granules) 

1/4 cup organic quinoa (or rice) cooked

500lm carton of Passata (we get ours from aldi) 

Passata carton filled with water

1/2 organic sweetheart cabbage (or normal cabbage) 

4 slices cooked bacon

Grated cheese

Directions 

Preheat oven to 180 degress c and grease a glass or stone dish. I used my pampered chef stoneware square dish. 

Sauté onions, carrots and garlic

Add mince and brown

Stir in paprika and garlic 

Add the cooked quinoa passata and water 

Place a thin layer of cabbage on the bottom of your dish then half the meat mixture another layer of cabbage then the rest of the meat and the rest of the cabbage on top

Cook in the oven for 40 minutes or until the mixture is bubbling and the cabbage on top looks cooked, while its in the oven cook your bacon and grate cheese then remove from oven and top with the cheese and bacon 

Return to the oven for about 15 mins or until the cheese is done however you like it, we like ours browned and bacon crisp. 

You can serve with salad, sour cream or just have it on its own like we usually do.

  1. This may, just may actually get me to eat cabbage on a day other than St. Patrick’s Day! You get bonus points for making it look so good. I may have my husband try it without telling him, just to see if he can name the ingredients!

  2. We are big fans of casserole here although I have never tried to do it with cabbage before so this looks interesting. Definitely a great family meal option!

  3. This looks delicious! I don’t make casseroles often, but the few times I have, they’ve been pretty cheesy! I love seeing the melted cheese pull apart is so relaxing. Maybe that’s just me…
