Since the kids went gluten free we have been trying out different recipes using coconut flour, we tried pancakes which was a disaster the first and second time! But these brownies came out fantastic the first time, they are so easy to make little t can help make them, he loves baking and its not surprising that these are his favourite.
We get most of the ingredients for these at Costco and want to make them dairy free too by using cacao instead of the chocolate chips and also change the maple syrup to coconut sugar but until i figure out how to do that this is the recipe we are using.
They are moist and have a slight coconut flavour, if you are not too keen on coconut flavour then change the milk or use a different coconut flour, depending on the make I’ve noticed a difference in the flavour.
12oz semi sweet chocolate chips plus a few handfuls to sprinkle on top
2/3 cup coconut oil
3/4 cup grade A Maple Syrup
1tsp vanilla extract
1 cup coconut flour
1/2 tsp baking soda
3/4 cup coconut and almond milk
Preheat oven to 160 degrees c
Grease a brownie dish with coconut oil
On a low heat melt coconut oil and chocolate chips.
Pull off heat and add maple syrup and vanilla extract and mix well.
Transfer mixture into a mixing bowl, if you have used a big enough pan and its no longer warm then you can use that.
Add in the eggs one by one mixing thoroughly after each one.
Add in the coconut flour and baking soda gradually mixing all the time, then add the milk and stir till combined.
Pour into brownie tray and sprinkle chocolate chips on top – little ts favourite part other than mixing 🙂
Place in the middle of the oven and bake for 40 mins then insert a skewer it should come out clean near the edge and slightly moist in the middle, you dont want to dry it up too much but If its not done leave in for another 10 mins keep a check on it until its done. Then make a note so you remember how long it took for next time.
Let it cool slightly and enjoy 🙂
Note. We found that its much more moist the next day for some reason. I have no idea why but its yummy either way 🙂
