Having to eat five meals a day has been difficult but there has been a few things I’ve been able to prep in advance and freeze which has made it a whole lot easier. This is one of them and I’m quite surprised how much i like it, I’d never had it before but after a few adjustments id say it was now one of my favs and there is so many ways to serve it and things to serve it with!
Little t loves to fill up, pour, stir all that kind of thing so i prepped the veg to go in the instant pot and let him put it all in, while naming the vegetables and their colours.
Once everything is in the instant pot, i put it on slow cook for 6 hours and then leave it overnight to cool so that i can blend and bag it up in cups the day after. This makes 10 meals of 1 cup each, so plenty to keep me going for a few weeks.
I add avocado as thats what it says in my meal plan, but you could add, cheese, sour cream, tortilla chips.. homemade of course 😀
1 red onion
2 red peppers
5 cloves garlic
1 litre kallo veg stock low salt
4 cartons organic black beans
2 tsp cumin
2 tsp chilli powder
1/2 tsp cayenne pepper
Add all ingredients into a instant or crock pot and slow cook for 6 hours
Blend and serve or freeze for later use;
Top with your favourite toppings and enjoy 🙂
